Chocolate Coffee Energy Balls

If you’re a coffee fanatic like me, YOU NEED THESE IN YOUR LIFE. They would be great for a preworkout snack or to save you from that afternoon crash!

And what’s great is that they’re suitable for everyone. I used the new Joe’s Dark Coffee Squares from Trader Joe’s and they are gluten-free. You can also make these dairy-free and vegan if you sub another chocolate (I would add another tablespoon of coffee then to get that coffee flavor).

These are SO EASY. You only need a food processor or high-speed blender.

Enough rambling, lets get into it!

Ingredients:

1c Almonds

1/4c Sunflower Seeds

1/2c Dates

2T Cocoa

1T Ground Coffee

1T Coconut oil

1t Vanilla

3 Joe’s Dark Coffee Squares, chopped

Directions:

  1. Soak dates in hot water for about 5 minutes to soften.
  2. Blend almonds and sunflower seeds for a few minutes.
  3. Add all other ingredients excluding the chocolate with 2T water or 2T of a dairy-free milk and blend until well-formed. Add more water or milk a tablespoon at a time if the mixture is too dry.
  4. Stir in the chocolate.
  5. Form into balls and place in the fridge/freezer. Enjoy!
